Simple mushroom ragout and Parmesan cheese give a rich taste (‘though it really isn’t) to this vegetarian option. Shiitake mushrooms, onion, garlic, red wine, thyme, and s & p with a bechamel sauce of olive oil, shallots, flour, milk and s & p. Yummy!
